The Sitemap

The Sitemap is the primary way by which you'll view the Page tree on your site. It displays every Page you've saved, including drafts, published pages, and non-Menu pages. The only pages that are excluded from the Sitemap are News, Events, and People, as those would likely overwhelm the listing due to their sheer volume. They are instead displayed via separate Page-listing tools.
Here's what the top of the Sitemap on this site looks like:

Notice that there are two pages in this screenshot which do not show up in the menu atop this page? Those are non-Menu pages, which you can create from any Page by un-checking the "Show in Menu" checkbox on the right side of its Sitemap row.
This is useful for when you want a page to be either fully hidden from all visitors, or when you wish it to not appear in the menu, but still wish to link to it from the content of other pages. Though note that unlike Private pages, non-Menu pages are not otherwise protected, and can be visited by anyone who guesses the URL.
Unchecking the Show in Menu checkbox for a page with children will also make all the child pages disappear from the menu. And speaking of children...
The Page Tree
The Sitemap is where you build your site's Page tree. Pages can have children, and those children can have their own children, etc. You're encouraged not to go deeper than a maximum of 4 levels, though, as the menu system is not designed for that, and it can get very confusing for visitors.
To create a new child page, you can either click the green "Add Child" icon on the right of the page that you want to be its parent, or hover your mouse over the page's row and click the "Add Child Page" button that appears.
To move an existing page beneath another page in the tree, click and grab the "four arrows" button on the left side of its Sitemap row, and drag it to another place in the Sitemap. You can move the page to be a sibling of another page by putting it at the same depth, or move it to become a child by dragging it to the right, so it gets indented below the designated parent.
